Why is Microsoft Cortana, Edge, and the Windows Store Missing on new Elo Touchcomputer?

This article explains why certain Windows features are missing on an Elo Touchcomputer

The Windows 10 version that Elo sells is Windows 10 Enterprise IoT LTSC. These versions of Windows 10 do not include many of the standard apps and features found on Windows 10 Pro, Enterprise, Home, or Education versions. This article from Microsoft ™ explains some of these missing features.
